Well done 30 mins per 450g (1lb) + 30 mins
Medium 25 mins per 450g (1lb) + 25 min
Rare 20 mins per 450g (1lb) + 20 mins
Lamb
Well done 30 mins per 450g (1lb) + 30 mins
Medium 25 mins per 450g (1lb) + 25 mins
Pork
Well done 35 mins per 450g (1lb) + 35 mins
Medium 30 mins per 450g (1lb) + 30 mins

Recipe of the Month
 

Hockeys Simple Beef Casserole

A real 'Winter Warmer' and so easy to prepare and cook.. give it a try


Serves: 4 hearty appetites

Ingredients

500g (1lb) Hockeys Braising Steak Slices (Cubed)

1 onion (diced)

1 x Carrot (diced)

1 x Leek (diced)

2 x Celery Sticks (diced)

75g sliced Mushrooms

olive oil

2 tbsp Plain Flour

3 sprigs of Thyme

750ml Beef stock (fresh, cube or concentrate)

2 tbsp Tomato Puree
Method

1.Heat 1 tbsp olive oil in a large pan then add the onion, carrot, leek, celery and garlic, and cook gently for 5 minutes, do not brown. Add the mushrooms and cook everything for a further 5 minutes then remove from the pan. Heat a little more olive oil in the pan, add the beef and brown all over then stir the flour in well. Return the veg to the pan and add the thyme, stock, purée and Worcestershire sauce. Season and mix well. Bring to a gentle simmer and cook covered for 1 1/2 hours until tender, stirring occasionally. Serve with jacket potatoes, rice, pasta or mash.

Our monthly recipes are taken from an old family cookbook dated 1746. The preface dedicates the book to:- Good wives, tender mothers and careful nurses.. We have obviously had to translate many of the recipes and cooking terms.
Sausages & burgers

When we make our sausages & we add an ingredient such as leeks for the pork & leek sausage, apple for the pork & apple burgers & so on, the ingredient we use is ‘the real thing’, fresh leeks, fresh apples etc... We do not add artificial ingredients.

Our sausages are sold in 1/2kg (1lb) packs with 8 sausages to the 1/2kg
Our chipolatas sausages are sold in 1/4kg (1/2lb) packs with 8 chipolatas to the 1/4kg
Our burgers are sold in 1/2kg (1lb) packs with 4 x 8oz burgers to the 1/2kg
Please be aware
When ordering the above items, please specify number of packs required.  When you place an order please be aware that it is not always possible for us to get it ‘spot on’, the weights can vary by a few ounces.
Remember we hand make our sausages & burgers & we hand pack our produce thus we are not able to be as accurate as a supermarket for example.
